Melt half of the butter in a pan (this can be the same pan as the one you will make your risotto in) over medium-high heat and add in the salmon cubes.

  3. Mix a vegetable stock cube into boiling water.

  5. Begin cooking salmon in a separate pan along with courgettes and peas.
  6. Once softened a little add vegetables to the risotto pan and continue to stir.
  7. When the risotto has finished cooking, remove the pan from the heat and stir in a little butter, seasoning also with salt and pepper.
  8. Cover risotto with a lid for a few minutes while the salmon finishes cooking and then plate.

Season with salt and black pepper, and mix. Cook for a few minutes until the salmon has a nice color on the outside and is cooked almost through. In a small bowl, mix sauce ingredients. In a small saucepan, bring broth to a simmer; keep hot. In a large saucepan, heat oil over medium heat.
