- First up we shall make the kadai masala: Heat a non stick pan, and add all the ingredients of the kadai masala excluding the fenugreek leaves and roast for a few minutes. When everything is well roasted, add the dry fenugreek leaves, give it a stir and remove from the heat.
- Give it a few minutes to cool, then grind into a coarse powder and set aside.
- Heat some oil in a separate pan, and then add the goat/lamb and cook it till its brown.
- Next add the turmeric, onions, ginger and garlic pastes, and the tomatoes and season with salt.
- Cook on medium low for about 40mins so that the meat is cooked through. Then add the rest of the ingredients: kadai masala, yogurt, chile, chile powder, chopped coriander and the mint. Give it all a good stir and let it cook for a few more mins and remove from the heat.
